Beef Stroganoff
By Middagsarkivet
- Easy
- 4 servings
Stroganoff arrived in the Nordics by way of Russian and Baltic kitchens and settled in for good. In Sweden it mutated into korv stroganoff, made with sliced falukorv sausage, which is what most Swedes picture when they hear the word. The beef version stayed the slightly fancier sibling, the one that shows up when there is sirloin in the fridge or guests on the way.
Danish and Norwegian home cooks treat it the same way: a skillet dish, not a braise. The meat is cut thin and cooked in a minute or two, and the sauce is finished with sour cream off the heat so it stays smooth. Paprika and tomato paste give it the rusty color; mustard and Worcestershire keep the cream from tasting flat.
A chopped dill pickle stirred in at the end is common in Finland and eastern Sweden. It sounds wrong and tastes right, so it is listed as optional rather than left out.

How to make it
- 1
Prep the beef
Pat the beef strips dry with paper towels and season them with salt and black pepper. Dry meat browns; wet meat steams.
- 2
Sear the beef
Heat 1 tablespoon of the vegetable oil in a large skillet over high heat until it shimmers. Add half the beef in a single layer and sear without stirring for about 1 minute, then toss for another 30 seconds and transfer to a plate. Repeat with the remaining oil and beef. The meat should still be pink inside.
- 3
Cook the mushrooms
Lower the heat to medium-high and melt the butter in the same skillet. Add the mushrooms and cook, stirring now and then, until they have given up their liquid and started to brown, 7 to 8 minutes.
- 4
Add the onion
Add the onion and cook until soft and golden at the edges, about 5 minutes. Stir in the garlic and cook for 30 seconds.
- 5
Build the sauce
Sprinkle over the all-purpose flour and stir for 1 minute. Add the tomato paste and paprika and stir until the paste darkens slightly, about 1 minute more.
- 6
Simmer
Pour in the beef stock a little at a time, scraping the bottom of the skillet. Stir in the mustard and Worcestershire sauce and simmer until the sauce coats a spoon, 4 to 5 minutes.
- 7
Finish off the heat
Take the skillet off the heat and let it stop bubbling for a moment, then stir in the sour cream. Return the beef and any juices from the plate, along with the dill pickle if using, and warm through over low heat without boiling, about 2 minutes.

Season and serve
Taste and adjust with salt and black pepper. Scatter the parsley over the top and serve straight from the skillet.
A couple of tips
Let the sour cream sit out while you cook. Cold sour cream hitting a hot pan is the main reason stroganoff curdles.
Cut the sirloin across the grain into strips no thicker than a pencil, and freeze the meat for 15 minutes first if it is hard to slice neatly.
If the sauce tightens up while the rice finishes, loosen it with a splash of beef stock rather than more cream.
What you need
- A large heavy skillet, 12 inches or wider
Serving
Serve over rice or wide egg noodles, with a green salad or quick-pickled cucumber on the side to cut the cream.
Storing it
Keeps 3 days in an airtight container in the refrigerator. Reheat gently over low heat or at half power in the microwave; a hard boil will split the sour cream and toughen the beef.

Questions and answers
- Can you freeze beef stroganoff?
- Not well. The sour cream separates on thawing and the beef goes grainy, so make it the day you plan to eat it.
- What cut of beef is best for stroganoff?
- Sirloin is the standard compromise between price and tenderness; tenderloin tips or flat iron also work. Avoid stew meat, which needs hours of braising and will be tough after two minutes in a skillet.
- Can I use creme fraiche or yogurt instead of sour cream?
- Creme fraiche is a direct swap and is less likely to split. Plain yogurt works but must go in off the heat and should not be allowed to boil at all.
- Why did my sauce curdle?
- The sour cream went in while the pan was boiling, or it was straight from the refrigerator. Pull the skillet off the heat, wait half a minute, then stir in room-temperature sour cream.
- Can I make it ahead for guests?
- Cook the mushroom and onion base through the simmer step a few hours ahead, then sear the beef and add the sour cream just before serving.
